I was looking for something to soothe my chocolate craving. A snack that wasn’t completely unhealthy but would appease my sweet tooth. Enter Energy Bites, a bite-size snack that can be shaped to fit any taste and the perfect healthy stand-in for dessert. As much as I would love to claim this ingenious invention as my own, I can’t. Energy Bites
- 1 cup oatmeal
- 1/3 cup honey
- 1/2 cup creamy peanut butter
- 1/4 cup mini chocolate chips
- 1/4 cup chopped walnuts
- Mix all ingredients in a large bowl and place in the refrigerator. Chill for half an hour.
- After the mixture has chilled, roll into bite-size balls. Keep refrigerated in an airtight container for up to one week.
Perfect, simple, delicious, and small. :-)
